It is one of the classic breakfasts of Jiyuan citizens, which requires the use of a special cooking utensil - "Ao". Due to its shape similar to ancient official hats, it is called "official hat bread" by Jiyuan citizens. The fishermen near the Xiaolangdi of the Yellow River also refer to it as "an egg that never capsizes", symbolizing that the wife is peaceful and should not capsize and cause accidents. Heat the pan, apply oil, and pour in a spoonful of mixed flour batter with salt, Sichuan pepper, and other seasonings (common ones include rice flour, millet flour, corn flour, soybean flour, and mixed flour). After frying, it will resemble the shape of an ancient official hat, and then sit on an egg. The outer layer is burnt yellow, the brim is thicker, the outer layer is burnt and the inner layer is tender. The top of the hat is a thin layer of burnt yellow skin, crispy and fragrant.

2. Braised Yellow River Carp in Brown Sauce

Braised Yellow River Carp in Soy Sauce is a unique delicacy in Jiyuan, with a rosy color, soft aroma, and delicious taste. It also has detoxifying and stomach strengthening effects. The delicious meat and dense taste bring people pleasure and surprise in taste time and time again. One fish costs sixteen dollars, ensuring the integrity of the meat while maximizing the full integration of ingredients and seasoning. Pan fry the whole fish in hot oil until it is about one-third cooked, add the secret soup and bring to a boil over high heat, then simmer over low heat. After the fragrance of the seasoning completely permeates the fish meat, sprinkle the fish body with thick scallions, and pour the specially made soup over it, making a sizzling sound. Every boiling point of the fish body immediately exudes a fragrant aroma.

3. Noodle Leaf in Sour Soup

It is named after its origin in Huling Village, Jiyuan. Its leaves are as thin as cicada wings and crystal clear. In ancient times, it was as famous as Daoxiao Noodles in Shanxi, Youpo noodles in Shaanxi and Lamian Noodles in Lanzhou, and it was a local famous food in northwest Henan.

Mix flour with eggs, sweet potato syrup, etc., and make a square shape. Cut both ends twice, looking like three toes. After frying, it turns yellow brown and is taken out of the pot, soft and sweet. Making sweet potato syrup is an important process in making sesame candy. First, heat the sweet potatoes, add barley malt and make a paste, then filter with sandcloth. Put the sweet potato juice into a pot and slowly simmer over heat.

5. Jiyuan Beef Balls

Beef balls are a kind of fried food. The method is to first chop the beef, mix it well with water, starch, and flour, add shredded ginger and five spice powder, ball it into a circular shape by hand or use a special mold to remove it, then fry it over medium heat for a moment, and then fry it over high heat until the outer layer is crispy and golden yellow. Remove it from the pan. There are two kinds of food: dry food and soup stew. For example, dry food can be served on a plate after controlling the oil. For soup stew, seasonings such as coriander need to be added in the soup. Beef balls are shaped like round balls, scorched outside and crisp inside. They are very muscular and have chewing heads. Jiyuan people have a traditional lifestyle. Every year during the Spring Festival, every family has to fry meat balls, just like pasting couplets and making dumplings, which has become a folk custom.

The mountainous area of Jiyuan is covered with oak trees. After the acorns are ripe, mix the acorn starch in water, then boil the water and pour in a mixture of water powder and paste. Quickly stir well, make large bubbles, turn off the heat, pour into a container, and let it cool naturally. The acorn jelly is ready. You can add seasonings according to your preferences, which can have a cool and smooth taste, and nourish the brain and strengthen the body. Rubber jelly, as a unique snack in the Wangwu Mountain scenic area, is deeply loved by tourists.

7. Rolling and turning

Rolling is a pure natural green food made by grinding and grinding the rapidly maturing wheat in the wheat field. It is one of the "new tasting" items for farmers in Jiyuan. The production process involves harvesting the wheat straw when the straw has completely turned yellow, the surface of the wheat grains has basically hardened, and there is still a pulp shape inside the grains. The wheat grains are then rubbed out, stir fried until half cooked, ground with a small stone, steamed until cooked, and seasoned before being consumed. Well done grinding, with green in the yellow and green in the green, the color, taste, and nutrition are all excellent, making people salivate and their appetite doubles.
